Quick and easy vegan basil pesto. Just blend all ingredients and enjoy!
- 50 grams 1 cup fresh basil leaves
- 1 ½ Tablespoon pine nuts or almonds or walnuts lightly toasted
- 1 clove of garlic chopped
- 1 ½ Tablespoon nutritional yeast
- 1 ½ Tablespoon olive oil
- 1 Tablespoon lemon juice
- pinch of salt
Blend all ingredients in your food processor or blender
Taste, and adjust if needed (For example; more salt, more acidity lemon juice, or more nuts)
I like my pesto quiet coarse, but if you like it very smooth just blend it for longer, and maybe add a little of water to it.
