Vegan Pesto, simple and easy to make

🥘 Main ingredients

The main ingredients for this vegan pesto recipe are simple, and easy to get. If you don’t have almonds in the house, then use walnuts of pine nuts instead.

  • fresh basil leaves
  • lemon juice
  • olive oil
  • galic
  • pinch of salt
  • nutritional yeast
  • toasted almonds

I love having a good basil pesto ready in the fridge for all those little snack moments or to make a dish a bit more interesting. As this pesto can easily be added to multiple dishes. Especially Mediterranean style food.

This vegan pesto is easy to adjust to your own liking. As you can see in this particular recipe I have used toasted almonds. But these can be substituted with pine-nuts or walnuts.

Personally I like my pesto a bit rustic, with actually still some small pieces in it. But for a smooth pesto just add a little water and blend longer.

The options for the use of vegan basil pesto are endless. It works great as a spread on a sandwich or in a wrap. With some fresh tomatoes, and salad. Or when in season, it pairs beautifully with avocado. It can last for up to 5 days in your fridge (Though it never survives more than 1 day in my fridge).

📖 FAQ , is pesto always vegan ?

Regular basil pesto is normally made with the use of parmesan or romano Cheese. Therefore not considered vegan. The cheese in this recipe is substituted with nutritional yeast. Which is used as a flavour enhancer, and gives a bit of that typical ‘cheesy’ flavour.

Ingredients

  • 50 grams (1 cup) fresh basil leaves
  • Tablespoon pine nuts or almonds or walnuts lightly toasted
  • 1 clove of garlic chopped
  • Tablespoon nutritional yeast
  • Tablespoon olive oil
  • 1 Tablespoon lemon juice
  • pinch of salt

Instructions

  • Blend all ingredients in your food processor or blender
  • Taste, and adjust if needed (For example; more salt, more acidity lemon juice, or more nuts)

Notes

I like my pesto quiet coarse, but if you like it very smooth just blend it for longer, and maybe add a little of water to it.
