At first I wasn't sure if I wanted to add a category of 'breakfasts' on my website. But during veganuary I noticed that a lot of vegan newbie's feel stuck for breakfast options. So I decided to include some of my favourite breakfast options, starting with these vegan pancakes.
They are very easy and quick to make. And so deliciously fluffy! Like the best pancakes in the world 😉

🥞 Main ingredients
- plain flour or wheat flour
- baking powder
- salt
- sugar
- non-dairy milk
- apple cider vinegar
- 1 teaspoon vanilla
- blueberries
- maple syrup
📖 Variations
The main photo in this post shows what you can do with matcha. Just add a little pinch of match powder in your pancake mixture, and you will get deliciously green pancakes.
I have chosen to top mine with blueberries, but of course you can use any other berries, or fruits. Think of;
- raspberries
- kiwi
- banana
- coconut
- figs
- mango
- or a mixture of various fruits

📋 Recipe
Ingredients
- This recipe would make 6 - 8 small pancakes
- 125 g 1 cup plain flour or wheat flour
- 1 tablespoon baking powder
- pinch of salt
- 1 tablespoon sugar if you like sweet, add more
- 240 ml 1 cup non-dairy milk
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla
- 100 g 1 cup blueberries
- 2 tablespoon maple syrup
Instructions
- Mix all the dry ingredients together in a bowl.
- In another bowl mix the wet ingredients.
- Whisk the wet ingredients into the dry ingredients, and leave to rest for 5 minutes.
- Bake on medium heat in a non-stick pan, use a little bit of vegetable oil, or vegan butter.
- Bake golden brown on both sides.
- Serve with blueberries (or any other berries in season) and a drizzle of maple syrup.
