Hummus with coriander and lime. We all love hummus! And the great thing about hummus is, you can be as creative as you like. Add any other vegetables, play around with herbs and spices, and be surprised!

So this one I made with coriander and lime, because I love coriander and lime! Therefore it deserved its own post. Everybody has their own favourite hummus, and everybody prefers a slight different texture.

I often use Coriander & Lime hummus to spread on sandwiches or wraps, with salad, or roasted vegetables. The possibilities are enormous with hummus, and I always have at least one in the fridge. It can last about 4 to 5 days in the fridge, depending on which ingredients (herbs and spices) you added. Herbs make it normally last less long.

coriander lime hummus

Hummus with coriander and lime

My absolute favourite!
Prep Time: 10 minutes
Total Time: 10 minutes
Servings: 1 makes 2 bowls of hummus

Ingredients

  • 1 can chickpeas drained
  • 1 Tablespoon tahini
  • 1 garlic clove roughly chopped
  • juice of half a lime
  • 1 Tablespoon of olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground paprika
  • 1/4 teaspoon cayenne pepper
  • 40 grams (small bunch) fresh coriander, chopped
  • pinch of salt

Instructions

  • Put all ingredients in a blender and blend until smooth
  • Check seasoning, and add any salt, or lime juice to your liking. If you think it is too thick, just add a little bit of water until you reach the desired texture.
